Summer | Week 26 Snackagories
It’s early morning, and I’m writing this from my porch before the weekend gets away from me.
Coffee in hand.
Cats in the window.
The basil needs watering.
This week felt full.
Not necessarily busy.
Just...full.
Some of my favorite moments were tiny.
Trimming snap peas with the windows open.
Vanilla ice cream with homemade rhubarb compote.
Fries and caviar with a friend on a random Wednesday.
Reading a cookbook on the porch after dinner.
The moments that stressed me out weren’t actually bigger.
They were just the moments where my attention wasn’t where I was.
I spent dinner planning the rest of the week instead of tasting dinner.
I expected my husband to read my mind instead of appreciating the one sitting across the table.
I let work conversations follow me home long after my laptop was closed.
It made me wonder if attention works the same way ingredients do.
When I meal prep, I don’t scatter my ingredients across twenty different recipes.
I choose one beautiful ingredient and let it show up again and again.
Maybe that’s how I want to move through summer, too.
One beautiful thing at a time.
The people in front of me.
The food on my plate.
The breeze coming through the windows.
The season that’s already here.
This Week’s Snackagories
This week’s snacks are built around ingredients that reward paying attention.
Summer produce is doing most of the work, while a jar of chili crisp ties everything together. The goal isn’t to make five completely different recipes…. It’s to build a week of meals from a handful of ingredients that play well together.
🥣 Savory Dip / Spread
Jalapeno Ranch Cashew Chicken Dip
One creamy dip. Endless uses.
Serve it with vegetables, spread it onto sandwiches, tuck it into wraps, or spoon it onto baked potatoes.
Ingredients:
Cooked shredded chicken
Raw cashews
Greek yogurt
Pickled jalapeños
Fresh dill
Chives
Garlic
Lemon juice
Ranch seasoning packet
Salt & pepper
Combine all ingredients except for shredded chicken in a high-speed blender or food processor to create a sauce. Fold in shredded chicken. Enjoy!
Niknack Tip: Whenever you’re making a dip, make enough to become tomorrow’s lunch.
🍞 Grab + Go Pantry Snack
Strawberry Lemon Protein Loaf
Summer strawberries don’t need much. Let them taste like strawberries.
Ingredients:
Greek yogurt
Eggs
Vanilla protein powder
Oat flour
Almond flour
Fresh strawberries
Lemon juice + zest
Vanilla
Baking powder
Slice it, freeze it, and future-you has breakfast ready all week.
🥕 Fresh Produce
Cucumber, Corn & Basil Salad
Fresh corn, crunchy cucumbers, fragrant basil, and a spoonful of chili crisp that somehow makes the whole bowl taste even more like summer.
Ingredients
Sweet corn
Persian cucumbers
Basil
Chili crisp
Lime
Olive oil
Flaky salt
Niknack Tip: Dress right before serving so cucumbers stay crisp and basil stays vibrant. For meal prep; keep the corn, cucumbers and basil in a separate container from the sauce.

No-Bake Pistachio Bars
No oven. No fuss. More time outside.
Ingredients:
Medjool dates
Pistachios
Cashews
Oats
Vanilla protein powder
Chia seeds
Coconut
Vanilla
Pinch of salt
Perfect straight from the freezer on hot afternoons.

Farro & Lentil Meal Prep
The quiet backbone of lunches all week.
Dress it once and pair it with whatever vegetables, herbs, or proteins end up coming home from the farmers market.

Lentils
Feta

Pumpkin seeds
Pepperoncini

Meal Prep Tip: Prep grains and legumes plain, then season them differently throughout the week so lunches never feel repetitive.
One Beautiful Thing
When I’m cooking, I don’t try to make 15 recipes.
I pick one ingredient and let it show up in multiple places.
One ingredient.
Multiple meals.
Less decision fatigue.
More enjoyment.
Last week it was snap peas.
This week it was chili crisp.
Maybe life works like that, too.
Instead of scattering my attention across work drama, future plans, expectations, my phone...
what if I anchored it in one thing?
The meal.
The breeze.
The birds.
Summer.
